The “urban” in Ms. Michelle’s Urban Gourmet was actually the name of the family that built the cottage about 150 years ago. Michelle Gillette, the owner of the bakeshop, did her research before she bought the yellow cottage. Although Gillette doesn’t suffer from any digestive issues, she knew she wanted to serve the gluten-free community. Her menu boasts of scones, muffins, and fresh fruit tarts. All of her breads are all gluten free as well.

Carolyn Arcario and May Mucci revamped the idea of a bakery when they set out to open not only a gluten-free, but sugar-free, and dairy-free bakery. Arcario said that it was a little hard when the ingredients to make basic bakery items were nixed, but she accepted the challenge. As an experienced home baker, she started working with other flours to combat her inability to digest gluten. She uses different rice and flours to make her cookies, cakes, and brownies. She relies on natural sugar from the grains, and her customers can’t even tell the difference!
